You can actually reclaim your original horse, Pebbles! Travel to Semine in the south and speak with the horse trader. However, he won't simply hand her over. You'll need to either pay him with Groschen, or attempt to persuade or intimidate him. During my playthrough, after completing parts of the main questline and working with Radovan, I was able to convince the trader to relinquish Pebbles without payment by using Henry's upgraded attire to project nobility. Note that this did slightly lower my reputation in Semine. If persuasion fails, prepare to pay for Pebbles' return.
How to Steal a Horse
Alternatively, you can acquire a horse through less…legal means. While wild horses are rare, you'll find them on farms or in stables. Stealing carries the risk of being caught.

I recommend visiting Vidlak Pond in the west. The fishermen's farmhouse there has two horses readily available for…liberation. Simply mount one and ride away.
Afterward, head to the Nomads' Camp east of Vidlak Pond. The horse trainer NPC there can teach you how to saddle and tame your newly acquired steed, though you'll need to pay for their services. Alternatively, you can forgo this step and ride your stolen horse as is.
